Cimarron Blanco

Cimarrón Tequila from Atotonilco, Jalisco is distilled from agave hillside agave grown at 4,620′ elevation, where plant sugars reach an average of 24-26° Brix. A low-pressure, slow agave roast creates Cimarrón’s bright, forward flavor, and fermentation is entirely natural using winemakers’ yeast.

 This tequila features aromas of citrus, caramel, butter, cooked agave, and sage are the beginning of a pleasingly balanced and very unique tasting experience. Fortaleza Reposado has it’s own distinct character, and is not like any other tequila. The flavor profile includes cooked agave, citrus, vanilla, apple, earth, and cinnamon. The finish is long and rich, delicately spicy, and it has an oily texture that make this a joy to drink.

Traditionally aged for at least six months in very old George Dickel Tennessee whiskey barrels, now often blended with some new barrels for enhanced character, Our Reposado is an expression of the landscape, with flavors influenced by the floral, herbal, and citrus plantings we grow at Rancho El Pandillo. The flavor profile includes cooked agave, oak, vanilla, and semi-sweet chocolate, with notes of caramel, butter, cinnamon, and citrus.

Light straw in color, our Reposado tequila presents a delicate, charming nose. The distinctive herbal aroma of roasted agave is delicately balanced with subtle notes of ripe coconut, vanilla and sweet American oak. Lusciously supple and warming, this agave tequila is rich with succulent flavors, thanks to barrel aging in American oak. Sweet flavors of light caramel and dried fruits lead to subtle notes of vanilla and roasted nuts.

 This tequila features aromas of caramel, vanilla, butterscotch and cooked agave aromas. This tequila is so rich and complex that some people are even able to detect pineapple, peach, orange blossom, nutmeg, and raisin in the nose. Once in your mouth, the full cooked agave experience continues with a thick and oily texture that coats your mouth in a very soothing way. Butterscotch, caramel, toffee, citrus, and hazelnuts are common flavors that people identify.

The Tequila Ocho Plata Puntas 2024 Mirandillas represents the pinnacle of this commitment. Distilled to 54% ABV using time-honored techniques, this high-proof Blanco showcases the singular flavors and aromas derived from the unique microclimate and volcanic soils of the Mirandillas region. It features aromas of raw agave, melon, citrus, lime, peppers, and slight salinity. The palate features cooked agave, vanilla, cinnamon, peppermint, green apple, and citrus. Ensamble

A blend of Espadín, Mexicano, and Barril agaves, made by the traditional methods: cooked in earthen pit ovens, crushed by stone tahona, open air fermented with wild yeasts and double distilled. Balance aromas of fruit an spice greet the nose with notes of pear, green apple, allspice, and vanilla. The palate showcases lime zest from Barril as well as stone fruit and green pepper. The warm and viscous finish of Mexicano features a touch of minerality.

Cenzino

Of the Durangensis family of agaves, this wild agave is typically harvested from the hillsides of Durango and takes nine years to mature. Cenizo thrives in high altitudes up to 8,500 feet with cool and dry conditions. This Cenzino opens with bright aromas fo tropical fruits, sweet honey and earthy redwood. The palate is driven by big fruit flavors of elderberry, papaya, and stone fruit. Hints of balck pepper and roasted green pepper add spice to the slight smokiness on the smooth and long finish.

Cuishe

One of the most physically distinct species of agave, Cuishe, grows vertically as a single stalk with its leaves spreading at the top and takes twelve years to mature. Due to its unusual structure, and the stalk containing the firmer piña material, Cuishe can be difficult to harvest and to work with in general. This agave offers aromas full of tropical fruit with a dry piney and mineral finish. The nose is driven by intense aromas of citrus, with burnt orange, notes of honeysuckle and herbaceous flowers. On the palate, layers of raw honey are balanced with jalapeño spice. A strong minerality spreads throughout the mouth leading to a smoky finish with a touch of wet stone

Cempasúchil

Made from Espadín agave, known as the genetic Mother of the Blue Weber Agave. This agave showcases aromas of wet earth, a rich smokiness on the mid-palate, and a finish reminiscent of wild flowers. In the final distillation Cempasúchil, a native Mexican flower often known as marigolds, as well as mandarin peels are dropped into the bottom of the still to impart floral aromatics with a hint of citrus.

This unique offering opens with bright aromas of citrus, late season florals and a touch of baking spice, particularly allspice. The palate highlights the late ingredients with fresh flavors of green pepper with orange zest, nutmeg, and anise. Hints of black pepper add spice to the slight smokiness of the mezcal on a smooth and long finish.

Distilled from joven durangensis agave, cooked in underground stone pits with black oak, extracted by hand with axe and mallet, and distilled in a hybrid still of wood and copper. This is a balanced mezcal with notes of summer fruit, nuts, and dry minerality that finishes seamlessly with a beautiful light smokiness.

Distilled from joven Espadin and Tobala agaves, cooked in underground stone pits with black oak, extracted via the Tahona, and distilled in copper pot stills. This is a round, full-bodied mezcal with a light smokiness that gives way to its minerality and delicate fruitiness.

Ensamble

A spectacular blend of Tobalá and Espadilla agaves. On the nose, you'll encounter inviting notes of bright citrus, white flowers, and early springtime aromatics. A cultivar cousin of the ever-popular Espadin plant, Espadilla is native to Puebla and provides a more complex and fruit-forward backbone for our Ensamble. The palate offers a rich yet approachable combination of papaya, white pepper, and pear skin which leads to the signature, lingering full-mouth feel that characterizes our Tobalá house style.

Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled.

Tobalá

This joven mezcal is un-aged and crystal clear. Made from 100% Tobalá agave grown in Puebla Mexico, you’ll find pronounced aromas of ripe fruit, bell pepper, honey, wet stone and smoldering campfire on the nose. The palate is lively with rounded notes of cooked agave, caramelized pineapple and fresh herbs that give way to a subtle smoky-smooth finish and a full mouth-feel.

Roasted for 5-8 days in underground pits before a ten-day to two week fermentation. Double distilled.

Palomo Mezcal con Mole

Made from ripe regional agaves, baked underground in a conical stone oven for five days, and milled by horse-drawn tahona. It is fermented with natural yeast in wooden tinas. The Mezcal is double-distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. For the third distillation, a 4-week maceration is done with all 30 ingredients of Carlos’ grandmother’s mole recipe, imparting notes of the chiles, peanuts, spices such as cinnamon, and an incomparable herbal aftertaste.
